red lentil dahl

Red Lentils 150gr
Basmati/Jasmine Rice
Coconut milk
Butter (Clarified preferred)
Turmeric
Cumin
(Smoked) Paprika
Garam Masala (or whatever “masala”)
Red Curry Paste/Chilli Pepper
Garlic
Ginger
Onion
Lime
Palm Sugar/Brown Sugar

Procedure

1. Chop one big onion in thin slices or cubes. Melt some butter in a skillet or pot and when barely bubbly, drop in the onion. 

2. Put the lentils in a sieve and wash them a few times. 

3. Let it cook for a few minutes and deglaze with white wine. Then add 1 grated glove of garlic and an equivalent amount of ginger and let it cook for 1/2 minutes.

4. Now add 1 teaspoon of each spice and the curry paste and let cook for a minuten. Then pour some of the coconut milk and the lentils. Let cook for a few minutes then add the rest of the coconut milk, shut the lid and let cook for 15 minutes while checking every now and then. (if cocunut milk is not enough to cook the lentils, add some broth or milk.

5. When the lentils are cooked, adjust the spices dosing to your taste and add the sugar. 

6. Serve with rice or naan bread. When plated, add a splash of lime for acidity. If the lime doesn’t work for you, then also refrain from adding sugar.
